Description
The objectives are as follows:
- To document price differences between organic and conventional food products, particularly as a function of distribution channel and place of purchase;
- Evaluate the cost of a more sustainable and healthier diet for households, by studying various transition levers to contain additional costs (reducing meat consumption, limiting food waste, changing purchasing locations, increasing the proportion of raw cooked products, etc.) and detailing the necessary changes in practices;
- Analyze some of the ways in which supermarkets can encourage consumers to buy sustainable products (organic products, plant-based protein foods). Particular attention will be paid to levers that make healthier, more sustainable food more affordable for households;
- Prepare to test these levers with pilot territories and distributors.
